Our delicious Kalua Pig (Big E’s Hawaiian take on pulled pork) is made with pork shoulder which is braised for 6-8 hrs wrapped in banana leaves and then mixed with Big E’s homemade Hawaiian inspired special sauce.
Inspiration: The word “kalua” in Hawaiian literally means “to cook in an underground oven”. This oven is called an imu.
When the meat is fully cooked, it is removed from the imu and shredded. This is done to allow the melted fat to mix with the meat to help maintain its uniform consistency and flavour.
